Simple Roasted Red Potatoes
Pairs with: Juniper Berry DRY Soda
An easy, colorful and versatile side dish. A serving of potatoes provides nearly half your RDA of vitamin C, 4 grams of protein and even more potassium than a banana.
15 red potatoes, scrubbed & cut in half
1/4 cup olive oil
1 clove minced garlic
3 tsp chopped fresh rosemary
Salt & pepper to taste
- In a13x9 inch pan, combine olive oil, potatoes and garlic, tossing lightly to coat.
- Sprinkle rosemary, salt and pepper over potatoes.
- Bake for 40 minutes until tender.
